2 Ingredient Pumpkin Muffins

It seems impossible right? Two ingredients to make pumpkin muffins? I was skeptical myself to. But being pregnant and wanting to spend minimal time in the kitchen and on my feet I figured this is the type of pumpkin recipe I was up for.

All it requires is a box of plain cake mix (vanilla or yellow). I opted for an organic cake mix because I figured it made this a little healthier. And the second ingredient is just canned pumpkin.

Pour in the cake mix and canned pumpkin. (I added a few generous shakes of nutmeg and cinnamon because I love the aromatic effect of those spices in fall baking). Stir well. Scoop mixture into a lightly greased muffin tin, bake at 350 until a toothpick poked in the middle of the muffins comes out dry.

It's that easy! And these really were so delicious. My husband has now deemed them his favorite pumpkin muffins. And I like that they're so easy to make and there's no major kitchen clean-up either.

These also freeze really well! I like to make a double batch and freeze one batch and just pop one in the microwave for breakfast each morning...hmmm!

Maternity Photos & Her Name

You may have read my earlier post where we announced our baby girl's first name. Well now we're announcing her middle name too...

Caroline Faith

You can read here how we chose her first name, Caroline.

We've had this ultrasound collage on our mantel since 17 weeks. We're getting a non-medical 3D ultrasound next month and we're so excited.

Your rolls and tumbles, twists and kicks are the best, Caroline! Sometimes when you're very active it makes me smile and laugh a little to look down and see you moving my belly bump around. Yesterday during ladies' Bible study at church you gave such a big pirouette that I wondered if anyone looking my direction had noticed. Keep dancing, baby girl.

We are so excited to meet you, Caroline Faith. About 90 days now till your due date (but we wouldn't mind if you decided to come a few days early).

Maternity Photos & Notes to Caroline

"For this child I have prayed..." (1 Samuel 1:27)

We love you, sweet Caroline. Every roll and tumble, every kick and arm stretch I feel you do in my belly delights me.Your daddy loves to put his hand on my belly and wait for you to move. Sometimes you're quiet. But sometimes, especially when he puts his face close to you and talks to you, you give a little kick right after. I think maybe you're just saying hello right back.

I love it when I lay down to go to sleep at night and then you get busy wiggling. I love it when I wake up in the middle of the night, or very early in the morning and I feel you kick. It's as if it's just you and me awake in the house at that moment, while your daddy sleeps, it's a moment that just you and I share while all the world is still.

A highlight from this week was attending our first birthing class. I was so excited to be there, because I know it means that your birthday isn't too far off now.  It also gives me something constructive to prepare for while I wait for you. 3 months will fly by and then you'll be outside in this world and sleeping in those precious pink sleepers your Grandma Osborne got for you.

A Nursery Surprise

Even though we moved into our house 2 months ago, up until now the nursery room has been more of a catch-all space than a nursery. Since the crib we ordered came in and was sitting in its box we decided it was time to get rolling on the nursery.
We headed to Lowe's to pick up a gallon of Valspar's Prairie Willow. And after twice receiving the wrong mix of paint ( the guy mixed us the wrong color twice when we specifically asked for and marked our sample of Prairie Willow), we headed home to paint. The mix-ups took us extra time and we didn't get started painting till later than we had planned. After fixing dinner I was wiped-out and fell asleep. I told my husband not to worry about painting it all tonight, I could help some after I got some sleep, but he had something else in mind...

Sunday morning I woke up to not only a completely painted nursery, but the crib was out of its box and fully assembled. So thankful for his selfless attitude, this was a wonderful surprise!

What do you think of Caroline's nursery so far?

Dove Conditioner Review

I've been using Dove bar soap for years now (it's the best on my sensitive skin!), but I have yet to try any of their other products. Until now. Being pregnant my hair has been dryer than usual, so I'm on the lookout for an affordable conditioner that will moisturize without weighing my hair down or making it greasy. So when I got asked to do a completely honest review of Dove Damage Therapy Intensive Repair I responded with an immediate "YES!".

The way Dove conditioner works is that it's suppose to restore surface damage on your hair while also restoring damage inside the hair follicle as well. Sounds like a pretty good treatment for dry strands if I do say so myself.
Now here's the 411 on what I honestly thought of Dove Damage Therapy Intensive Repair...

Scent: Light and fresh. Not flowery or fruity, but a good light clean scent.
I don't want to smell like an apple blossom passion fruit explosion so 5 stars on scent for me!

Ease of use: Could not be easier. The bottle is very easy to dispense from. I like the way the bottle stands, with the opening on the bottom of the bottle. That way I don't have to shake the bottle like a mad woman to squeeze out the conditioner. Anyone know what I'm talking about- that moment you realize you look rather comical as you stand there violently shaking a conditioner bottle to get it to dispense?
5 stars on ease of use for me.

Results: Dove promises that their conditioner will give you the end benefits of "smoothness, softness, shine and frizz control with no surface greasiness." I don't think I could describe my experienced end benefit with Dove's Damage Therapy Intensive Repair Conditioner much better. I was pleased with the smoothness, softness, and shine it added to my hair. Plus my favorite outcome: no surface greasiness! And, I might add my hair tends towards the very static side of things and this conditioner did not make my hair static one bit! In fact, I think it fixed my hair of it's static tendencies. I will definitely continue using Dove hair care products in the future.
Nice and shiny, no?
And I have no other product in my hair. Just used the Dove conditioner after shampoo, and once my hair was dry brushed it.

What Dove products have you tried?
